Chicken Curry

Serving for 4 persons

Ingredients

Quantity of cooked chicken (cubed)
1 tablespoon of oil
2 cloves of garlic (crushed)
1 onion (finely chopped)
1/2 tablespoon of coriander powder
1/2 tablespoon of cumin powder
1/4 tablespoon of chilli powder
1/2 tablespoon of turmeric
1/2 tablespoon of ground ginger
1/2 tablespoon of cinnamon
1 tablespoon of curry powder
salt and pepper to taste
1 cup of chicken stock
13 oz (400g) of tin chopped tomatoes

Method

1. Heat the oil in a medium sized saucepan and fry the onion and garlic until slightly golden.

2. Add all of the spices and seasonings to the pan and cook gently on a low heat for about a minute, stirring continuously.

3. Stir in the chicken stock, chopped tomatoes and cooked chicken. Bring to the boil then simmer for about 20 minutes.

4. Serve with boiled rice.
