Chicken a la King

Serving for 4 persons

Ingredients

1.5 lb (750g) of chicken breast (cut into cubes & marinated with salt, crushed ginger & garlic for about 15 minutes)
1/2 onion, diced
1/2 red and 1/2 green capsicum, cut into strips
12 mushrooms, cleaned & sliced
1/2 teaspoon of nutmeg
1/2 teaspoon of freshly ground black pepper
8 fl oz (250ml) cream
2 tablespoons of margarine or butter

Method

1. Fry the chicken with the margarine or butter over a medium heat, and then add the nutmeg for flavor Continue cooking until the chicken has turned white and is starting to brown.

2. Remove the chicken from the pan and set aside.

3. Fry the onions until they have turned transparent and then add the mushrooms to the pan and continue to cook for about 5 minutes.

4. Add the sliced capsicums, salt and pepper, and fry for another 5 minutes.

5. Return the chicken to the frying pan and cook for about 2 minutes before adding the cream. Reduce the heat and simmer on low for approximately 10 minutes, or until the sauce has thickened slightly.
