
Ingredients
1 whole chicken (ensure that it would fit into the oven or the BBQ lid if it is intended to use a hooded BBQ)
1 can of beer
3 tablespoons of coarse salt
4 tablespoons of dark brown sugar
4 tablespoons of sweet paprika
1 teaspoon of freshly ground black pepper
Method
1. Preheat the oven (or hooded barbecue) to 350 °F ( 180 °C).
2. Combine the salt, sugar, paprika and black pepper and mix well.
3. Open the can of beer and pour off about 1/3 of the beer.
4. Rub half of the spice mix all over the outside of the chicken, then put the remaining half into the beer can.
5. Place the beer can on to a roasting dish or a barbecue grill. Carefully lower the chicken over the can, pressing down firmly to make sure it balances.
6. Place in the oven and cook for an hour and a half, or until the chicken is cooked through completely.
