Ingredients
2 teaspoons of oil
14 oz (450g) of chicken mince
1 garlic clove, crushed
1 teaspoon of dried oregano
1/2 teaspoon of dried basil
1 cup of tomato puree
1/2 cup of water
Salt and pepper, to taste
1/4 cup of flour
2 cups of milk
1 cup of grated tasty cheese
3 large sheets of fresh lasagna
1/2 cup of grated mozzarella cheese
2 oz (60g) of butter
Method
1. Preheat the oven to 375°F (190°C).
2. Heat the oil in a frying pan over a medium to high heat, and cook the chicken mince and garlic for four to five minutes, until golden brown.
3. Add the oregano, basil, tomato puree, water, salt and pepper, and simmer for 5 minutes or until the sauce has thickened slightly.
4. Meanwhile, melt the butter in a small saucepan over a medium heat and stir in the flour until blended. Gradually add the milk, stirring continuously, then increase the heat until the sauce comes to a boil (keep stirring all the time). Reduce to a simmer and cook for a further 1 to 2 minutes before stirring in the tasty cheese.
5. Lightly grease a baking dish and place a sheet of lasagna on the bottom. Add a third of the mince mixture over the lasagna, then a third of the cheese sauce. Repeat this layering process twice, ending with a layer of cheese sauce. Sprinkle mozzarella cheese over the top.
6. Bake in the oven for 35 to 40 minutes. Leave to rest for 5 minutes before serving.
