
Serving for 4 Persons
Ingredients
1 lb (500g) of chicken breast, cut into bite sized pieces
1 red onion, sliced coarsely
2 tablespoons of sake
1 tablespoon of oil
For the Teriyaki Sauce:
2 tablespoons of soy sauce
2 tablespoons of mirin
4 tablespoons of sake
1/2 tablespoon of sugar
Method
1. Marinate the chicken pieces in the sake for about half an hour.
2. Mix all the ingredients for the teriyaki sauce together.
3. Thread the chicken and onion pieces alternately on to bamboo skewers.
4. Heat the oil in a frying pan and cook the skewered meat and onion for about 3 minutes on one side, then turn and cook for a further 3 minutes on the other side.
5. Add the teriyaki sauce to the frying pan, covering the skewers, and cook for a couple more minutes until the sauce reduces slightly.
6. Delicious served with rice.
